The Vintage

Much needed rain and mild temperatures before several weeks of long 100+ degree temperatures. Sugars stalled, but grapes were harvested at ideal pH and acidity levels with great balance.

Winemaking

Method: Traditionelle

Picked early for freshness. Fermented and aged briefly in stainless steel tank. Second fermentation spurred in sealed bottle. 16 months on the lees.

Disgorgement & dosage: Brut Nature - Disgorged on 5/9/2025 with no dosage.

Food Pairing

Fried chicken or oysters, briny fresh seafood, and cream-based shellfish dishes.

The Vineyard

Our 55 planted acres are within the Hoover’s Valley, which runs through the Llano Uplift formation in the Texas Hill Country AVA.

Situated near the banks of the Colorado River, the alluvial soils along with the significant mineral deposits make this a truly unique growing environment. Uplift itself has four distinct soil types, with each planted variety chosen for its suitability to the ground in which it resides: sand, granite, sandy loam and clay.

Mourvèdre Block A: est. 2015, granite soil, clone BN, 4, rootstock 1103P
