From Claire Richardson, Winemaker
This was a spectacular year at Uplift. The 2021 Cabernet Sauvignon is one of the best expressions of this variety that I have experienced in Texas. Though drinkable and delicious now, this wine will only improve as it ages.
The Vintage
A mass freeze in February and hail in May reduced quantity significantly, yet a cool summer yielded exceptional quality and balance in the remaining grapes.
Winemaking
Matured separately in 100% neutral French oak barriques before blending and bottle aging.
Food Pairing
Fatty meats, char-grilled fare, generously salted.
The Vineyard
Our 55 planted acres are within the Hoover’s Valley, which runs through the Llano Uplift formation in the Texas Hill Country AVA.
Situated near the banks of the Colorado River, the alluvial soils along with the significant mineral deposits make this a truly unique growing environment. Uplift itself has four distinct soil types, with each planted variety chosen for its suitability to the ground in which it resides: sand, granite, sandy loam and clay.
Cabernet Sauvignon Block L: est. 2017, granite soil, clone VCR 191, rootstock 1103P
